I haven't felt very inspired with cooking this week - things have been hectic and I haven't had the energy or inspiration to spend time in the kitchen. In my day-to-day cooking I rarely use recipes and have more of a go with the flow attitude, so for this week's Whip It Up I just decided to see what I could find. The theme for this week was vegetarian, but since I cooked a vegetarian dish last week I thought John might jump ship if I made another vege dish. On Sunday night (yes, its taken me this long to write this up -
shut up, I've been busy) I had a quick look in the cupboard to see what we had. I came across chicken breasts in the freezer and a mango in the fruit bowl, so I searched the internet to see what I could find and came across this recipe for Mango Chicken Salad, which gave me some ideas, even if I didn't follow the recipe very closely. So, here is my version:
Ingredients
- 2 chicken breasts
- 1 mango
- 1 orange
- 1 bag of mixed salad greens
- 2 tbs Thai sweet chili
- hot sauce
- Juice of 1 lemon
- 3 tbsp orange juice
- 3 tbsp red wine vinegar
- 9 tbsp olive oil
Grill the chicken breasts, chop the mango, peel and chop orange and throw in a bowl with the salad greens. In a small jar (I use an old mayonnaise jar) mix the other ingredients and shake until combined. Pour over salad. Toss and serve with garlic bread.
This was a really easy dish, but not the tastiest salad I've ever made. I think the addition of a few chopped mint leaves would make it a bit more interesting. Its a good meal and I'd make it again on a hot day when I can't be bothered cooking a proper meal.
It's cool how the salad uses the sweet mango and the spicy chili. Very exotic!
